The Incredible Growth of Agar-Agar Industry

Agar is a mixture of two components: the linear polysaccharide agarose and a heterogeneous mixture of smaller molecules called agaropectin. It forms the support structure in the cell walls of certain types of algae and is released when cooking. These algae are known as agarophytes and belong to the tribe of Rhodophyta (red algae).

Agar was used throughout Asia as an ingredient in desserts and as a solid substrate for culture media for microbiological work. Agar can be used as a laxative, appetite suppressant, vegetarian substitute for gelatine, thickener for soups, in canned fruit, ice cream and other desserts, as a clarifying agent for brewing and for sizing paper and fabrics.

The gelling agent in agar is an unbranched polysaccharide that is extracted from the cell walls of some species of red algae, mainly from Tengusa (Gelidiaceae) and Ogonori (Gracilaria). For commercial purposes it is mainly derived from ogonori. In chemical terms, agar is a polymer made up of subunits of sugar galactose.
