His work consists of the propagation and cultivation of plants with the aim of improving the growth, yields, quality, nutritional value and resistance to insects, diseases and environmental stresses of plants. They work as gardeners, farmers, therapists, designers and technical consultants in the food and non-food sectors of horticulture.

The word horticulture follows the model of agriculture and comes from the Latin hortus "garden" and culture "cultivation", from cultus, the perfect passive participle of the verb colō "I cultivate". Hortus is related to the English word yard (in the meaning of land associated with a building) and also to the borrowed word garden.

According to the American horticulturist Liberty Hyde Bailey, "Horticulture is the cultivation of flowers, fruits and vegetables, and plants for ornaments and fancy." A more precise definition can be given of "The growing, processing and sale of fruits, nuts, vegetables and ornamental plants, as well as many additional services". It also includes plant conservation, landscape restoration, soil management, landscape and garden design, construction and maintenance, and arboriculture. Unlike agriculture, horticulture does not include large-scale crop production or animal husbandry. At present, horticulture can be defined as the science and technique of production, processing and marketing of fruits, vegetables, flowers, spices, plantations of medicinal and aromatic crops.
